Why does my voice sound robotic or underwater after denoising?

That is the classic sign of too much reduction. The denoiser is subtracting parts of the voice along with the noise. Drop the reduction to around 15 to 20 dB and try again - a little remaining hiss usually sounds far better than a processed voice.

Which mode should I use for my recording?

Use the steady mode when the noise does not change, such as a hum, a hiss or a fan running the whole time. Use the broadband mode when the noise moves around, like wind, crowd noise or general room tone. Trying both takes a minute and the difference is usually obvious.

Can this separate a voice from loud music behind it?

No, and no honest tool should claim to. This removes noise that sits at a steady low level under your recording. Pulling a voice out from over the top of music is a different problem that needs source separation, not denoising.
